Tom's Cookbook Library: Italian favorites from gourmet archives

Gourmet Magazine, much loved by home cooks, isn’t around any longer. But thankfully many of its cherished Italian-American recipes can now be revisited in a new volume, “Gourmet Italian All-Time Favorite Recipes” (Houghton Mifflin Harcourt).

In a foreword to the volume, Sara Moulton introduces some of the favorite recipes published over the decades. The former chef at Gourmet’s executive dining room singles out some of her favorites: Lasagne Bolognese, Sweet Potato Gnocchi, Pork Chop Saltimbocca and Tiramisu.

Also included is the classic recipe for Chicken Marsala (below), a fine dish for the family meal or to serve guests.
